has made still makes sweet potato pie every year for both Thanksgiving and Christmas. It was always such a treat. Just smelling the pie cooking in the oven reminds me of the most wonderful time of the year ♫♫♫. So I needed my own vegan recipe that could come somewhat close to the pie my mom makes. Took me a few tries but I finally perfected this incredible, indulgent recipe for Vegan Sweet Potato Pie with a Graham Cracker Crust.
I have to say I impressed myself with this recipe. It’s absolutely delicious and almost too easy to make. Requiring just one bowl and an optional food processor. You probably also have all the ingredients in your pantry.
This is also a great recipe to bring to a party or family gathering. I highly suggest making the pie the night before and refrigerating overnight to allow the pie to set perfectly. That also makes it easy to grab and go on the day of the event. You can always warm the pie in the microwave or oven right before serving. Everyone that tastes this pie will be so impressed with the flavor and texture. Serving it to non-vegans? Get ready to blow them away.
Now of course you can go to the store and buy a graham cracker crust. ? But why would you when you can have a fresh piecrust that is infinitely better than the stale store bought version? Traditionally, sweet potato pies aren’t made with a graham cracker crust but they should be. It’s the perfect compliment to the warming and comforting flavors of the pie. Slightly crunchy and sweet combined with the whipped texture of the filling.
The pie filling is gluten-free. You can make the recipe entirely gluten-free if you use gluten-free graham crackers for your crust or buy a store bought gluten-free crust.
