This is one of those dishes you thought you’d never be able to eat again after going vegan. You thought wrong! I present my recipe for my simple (almost one pot), creamy, and delicious, Vegan Macaroni & Cheese! Using a roux sauce base similar to my Creamy Vegan Mushroom Pasta, you get the richness of a traditional mac and cheese without the cheese and heavy cream.
Admittedly, this dish is pretty indulgent – indulgent enough to be one of my go-to weekly “cheat” meals. But if you look past the vegan butter, you’ll see that it’s still a fraction of the calories and fat that you would have with traditional mac and cheese.
I love my Panko Breadcrumb Cheese on top because it compliments the cheesy garlicky flavor of the mac and cheese and browns beautifully in the oven. That first hot bite after it comes out of the oven is…heavenly.
